Easy Paleo Chicken Fried Rice

CAUTION: This granola is so. addicting. AND the ingredients are clean so it's hard to give yourself a reason to stop yourself from eating it in one sitting. I came up with this recipe because I can't eat any grains, sugar, dairy, or anything else that store bought granolas usually contain. Although it doesn't come in a pretty bag, I can say this is my favorite granola to date... with or without the added sugars.

"Grain-free, sugar-free" usually has the connotation that it will be dry or tasteless but this, my friends, does not fit the bill. I'll stop ranting about it and just get to the recipe ;)

Ingredients:

  • 1 Tbsp coconut oil, melted

  • 1/4 tsp vanilla

  • 1/2 tsp cinnamon

  • 1/8 tsp sea salt

  • 1/2 cup cashew

  • 1/2 cup walnut

  • 1/4 cup pumpkin seeds

  • 1/4 cup coconut flakes

  • 1- 1/2 Tbsp flax seeds

  • 2 Tbsp almond slices

  • 1/2-1 tsp stevia, liquid (use 1/3 cup maple syrup if sugar isn't a problem for you)

Directions:

  • Preheat oven to 275 F.

  • Place almonds, cashews, pumpkin seeds, sunflower seeds, flax seeds, and coconut flakes in a blender or food processor. Pulse for a few seconds until they break down into small chunks.

  • In the meantime, combine coconut oil, stevia, and vanilla in a medium-sized saucepan over medium-high heat and stir until the coconut oil is melted. Add in nut mixture and stir until the nuts are fully coated.

  • Remove the mixture from stove top and pour onto a cookie sheet lined with parchment paper. Spread the mixture evenly so that it is approximately 1/2 inch think.

  • Place the pan in the oven for 15 minutes, remove, and stir. Place back into the oven for an additional 10-15 minutes, or until the mixture is brown.

  • Next, remove the pan from the oven and sprinkle with Himalayan sea salt.

  • Cool for 20 minutes until it hardens. Break apart, and store in an airtight container.
